TFF: Carrot Cake


I like carrot cake. I like a heavy carrot cake with lots of carrot flavor, but no nuts. I especially like cream cheese icing. I know I've said that before, but it is true. I like cream cheese icing and think nothing can taste bad if it has cream cheese icing on it.

Except maybe this cake. Sure, it was impressive looking, with all those layers, but it was too moist, boring, dull and needed more icing for me to like it.

I, however, was in the minority on this one. I gave away big chunks of this cake, and every comment back was highly complimentary. My kids asked for seconds and for cake in their lunches.

Since this was a Tyler Florence recipe, for Tolan's Birthday cake, (I like that name, what a unique name,) it is my selection this week for Tyler Florence Fridays. The recipe comes from Dinner at My House but as usual is available online here.

If anyone else has made this, what do you think? Is it just because I omitted the nuts? Did I mess something up? Did I have too many layers or just not enough icing?

So many questions - and the only way for me to correctly answer them would be to try the cake.

Haven't made this recipe but the carrot cakes I've enjoyed (and it sounds like I love them as much as you do) maybe more coarsely textured than this one.
Didn't you have any leftover cream cheese frosting you could serve on the side? Or just make extra. (yes I know I'm very bad)

Cream cheese icing is the best! I'm sorry to hear you were a bit disappointed in it. It looks fabulous!

Sorry this one was disappointing. I haven't had this carrot cake so I can't help trouble shoot it, but I recently made Dorie Greenspan's Bill's Big Carrot Cake, and it was the best!

Hmm, I haven't made Tyler's cake, but I do like a carrot cake with lots of spice and texture (and a bunch of frosting never hurts either). I recently made Dorie's - it's on my blog - and I ground the nuts rather than chopped them. One way to have the nuts but not have nuts, if you know what I mean. Your cake looks good though, so I can see why your tasters liked it.

I am with you - no nuts in the carrot cake and cream cheese frosting is the best!
Sorry it wasn't your fave, but I agree with Tanna - maybe more icing will help it out!
